Paarl
Paarl lies 60 kilometres north-east of Cape Town in South Africa's Western Cape and is one of the country's most historic wine regions, with roots reaching back to the arrival of the French Huguenots in 1688. The area is named after Paarl Rock, the world's second-largest granite outcrop after Half Dome in Yosemite, which glistens like a pearl after rain.
The climate is Mediterranean with a marked continental character, warm dry summers and humid winters, and the soils range from granite on the mountain slopes to clay and shale on the valley floor. The area contains several wards, including Simonsberg-Paarl, Voor Paardeberg and Wellington (a separate district). Shiraz is the region's flagship grape, complemented by Cabernet Sauvignon, Pinotage, Merlot and Rhône varieties such as Grenache and Viognier, while the whites are made from Chenin Blanc, Chardonnay and Viognier. The style is typically full-bodied and generous with ripe dark berries, plum, spices, cocoa, pepper and soft tannins, while the whites show tropical fruit, honey, citrus and minerality. The area is known as home to large producers such as KWV, Nederburg and Fairview, as well as an important source of Méthode Cap Classique and brandy.

Storage
Store the bottle horizontally at 12–14°C and avoid direct sunlight, vibrations, and temperature fluctuations.
Opening
Allow the bottle to stand upright for 24–48 hours before opening to allow sediment to settle. Use a professional corkscrew and open carefully.
Enjoyment
Serve at 17–18°C and be patient – there is a great difference in how and how quickly wines open up when they are aerated.
