The wine is classified under the Denominazione di Origine Controllata and comes from the Recioto della Valpolicella area, located north of Verona. This specific appellation is recognized for having one of Italy's oldest sweet wine traditions, with roots dating back to the Rhaetic wines of the Roman era. Recioto is historically regarded as the original ancestor of both modern Amarone and standard Valpolicella.
The blend is primarily based on the local Corvina and Corvinone grapes, which constitute 45 to 95 percent of the wine, supported by 5 to 30 percent Rondinella and small amounts of other regional varieties like Molinara and Oseleta. The wine is crafted using the traditional appassimento method, where the grapes are dried for 100 to 160 days on bamboo frames or in a specialized drying room called a fruttaio. This extensive drying process concentrates the natural sugars before fermentation, which is eventually stopped to retain a significant level of residual sugar in the finished wine.
