Denne vin er en Appellation Bourgogne Contrôlée fra 1998, fremstillet af Domaine Tollot-Beaut. Vingården blev grundlagt i 1880 af François Tollot i Chorey-lès-Beaune, en lille kommune beliggende mellem Beaune og Aloxe-Corton i Côte de Beaune. Huset anerkendes i dag som et af de mest velrenommerede mindre familievinhuse i hele Bourgogne.
Vinen stammer fra årgang 1998 i Bourgogne, en årgang der har opnået en score på 87 point og beskrives som drikkeklar, balanceret og solid. Vinen er aftappet på selve domænet, en praksis som Tollot-Beaut var pionerer inden for. Allerede i 1921 valgte de som nogle af de første i Bourgogne at aftappe deres egne vine frem for at sælge dem som druer eller i tønder til négociants – en banebrydende beslutning, som det meste af regionen først tog mange årtier senere.
I dag drives huset af femte generation, bestående af fætrene Nathalie, Olivier og Jean-Paul Tollot. De forvalter 24 hektar vinmarker fordelt på kommunerne Chorey-lès-Beaune, Savigny-lès-Beaune, Beaune og Aloxe-Corton. Deres portefølje rummer blandt andet de to sjældne monopoler Savigny-lès-Beaune Champs-Chevrey og Chorey-lès-Beaune Pièce du Chapitre, samt Grand Cru-markerne Corton, Corton-Bressandes og Corton-Charlemagne. Vinen har et alkoholindhold på 12,5 %.

Storage
Store the bottle horizontally at 12–14°C and avoid direct sunlight, vibrations, and temperature fluctuations.
Opening
Allow the bottle to stand upright for 24–48 hours before opening to allow sediment to settle. Use a professional corkscrew and open carefully.
Enjoyment
Serve at 17–18°C and be patient – there is a great difference in how and how quickly wines open up when they are aerated.
