Burgundy Domaine Tollot-Beaut 1997
Domaine Tollot-Beaut was founded in 1880 by François Tollot in Chorey-lès-Beaune, a small commune situated between Beaune and Aloxe-Corton. Today, it is recognized as one of the most highly regarded smaller family wine estates in all of Burgundy. A significant historical milestone for the estate occurred in 1921, when Tollot-Beaut became one of the first producers in the region to bottle their own wines, rather than selling grapes or barrels to négociants. This pioneering decision was made decades before the majority of Burgundy followed suit. Currently managed by the fifth generation—cousins Nathalie, Olivier, and Jean-Paul Tollot—the estate cultivates 24 hectares spread across four communes. Their portfolio includes two rare monopolies, Savigny-lès-Beaune Champs-Chevrey and Chorey-lès-Beaune Pièce du Chapitre, alongside Grand Cru holdings such as Corton, Corton-Bressandes, and Corton-Charlemagne.
This wine is classified under the Appellation Bourgogne Contrôlée, the foundational regional appellation established in 1937 that covers the extensive wine region of Burgundy in eastern and central France. The region's viticultural history was profoundly shaped by medieval monks who meticulously mapped the countless terroirs and climats. The classic terroir here is defined by a mix of clay and limestone soils, combined with a continental climate of cold winters, cool springs, and warm summers. These conditions are ideal for the region's primary grape varieties, Pinot Noir and Chardonnay. The 1997 vintage from this area received a score of 86 points and is characterized as charming, but quickly developed.
Produced in France, this 1997 vintage is estate-bottled by the proprietary growers, reflecting the family's long-standing tradition of overseeing the entire process from vineyard to bottle. The wine is presented in a 750 ml format and contains 12.5% alcohol by volume.

Storage
Store the bottle horizontally at 12–14°C and avoid direct sunlight, vibrations, and temperature fluctuations.
Opening
Allow the bottle to stand upright for 24–48 hours before opening to allow sediment to settle. Use a professional corkscrew and open carefully.
Enjoyment
Serve at 17–18°C and be patient – there is a great difference in how and how quickly wines open up when they are aerated.
