Chorey-lès-Beaune is located in the Côte de Beaune, situated just north of Beaune between Aloxe-Corton and Savigny-lès-Beaune. Granted AOC status in 1970, it is one of the few village appellations in the region located on the plain rather than the slopes. The area covers approximately 134 hectares of marl-limestone alluvium with a stony subsoil, which becomes more gravelly towards Aloxe-Corton and more clayey towards Savigny. The appellation is dominated by Pinot Noir, an elegant blue grape widely cultivated in Burgundy, as well as in Champagne, Germany, Oregon, and California. Chorey-lès-Beaune is recognized as an accessible introduction to both the Côte de Beaune style and village-level Burgundy.
Domaine Tollot-Beaut was founded in 1880 by François Tollot and remains one of the most highly regarded small family wineries in Burgundy. A significant historical milestone for the estate occurred in 1921 when Tollot-Beaut became one of the first producers in the region to bottle their own wines, rather than selling grapes or barrels to négociants—a pioneering decision made decades before it became common practice. As noted on the label, this wine was bottled directly at the domaine. Today, the estate is managed by the fifth generation, cousins Nathalie, Olivier, and Jean-Paul Tollot. They cultivate 24 hectares across four communes, holding rare monopoles such as Savigny-lès-Beaune Champs-Chevrey and Chorey-lès-Beaune Pièce du Chapitre, alongside a Grand Cru portfolio that includes Corton, Corton-Bressandes, and Corton-Charlemagne.
