The 1997 Champ-Chevrey Savigny-lès-Beaune 1er Cru is a French red wine produced by Domaine Tollot-Beaut. Founded in 1880 by François Tollot in Chorey-lès-Beaune, the estate is recognized as one of the most reputable smaller family wineries in Burgundy. Today, it is managed by the fifth generation of the family, cousins Nathalie, Olivier, and Jean-Paul Tollot. The estate spans 24 hectares across four municipalities, and this specific wine originates from one of their two rare monopolies, the Savigny-lès-Beaune Champs-Chevrey vineyard. The wine was bottled at the domaine, a practice Tollot-Beaut pioneered in 1921, making them one of the first in Burgundy to bottle their own wines rather than selling to négociants—a decision made decades before it became common in the region.
Located in eastern France, the Burgundy region was historically shaped by medieval monks who meticulously mapped its countless terroirs, creating a finely meshed system of climats. Within the Côte de Beaune lies Savigny-lès-Beaune, a communal AOC established in 1937. Covering approximately 350 hectares, it is one of the largest communal appellations in the area. The climate is continental, with warm summers and cold winters, and the topography features a side valley between Beaune and Aloxe-Corton. The soils consist of chalk and clay over a limestone bedrock. The 1997 vintage in this area received a score of 86 points and is described as charming, but quickly developed.
This Premier Cru, bottled at 13% alcohol, is made entirely from Pinot Noir. This elegant dark grape variety dominates the red wine production in Savigny-lès-Beaune, accounting for about 90 percent of the local plantings. While Pinot Noir is the signature grape of Burgundy, it is also widely cultivated in other prominent wine regions such as Champagne, Germany, Oregon, and California.
